Hey guys, I’m Skyler. Welcome to Blue Skies and Veggies.
Blue Skies and Veggies is my spot on the internet to share super simple plant-based recipes. I went vegan shortly after graduating from college, and I loved trying new recipes from my favorite food bloggers. Pretty soon, I started experimenting with creating my own recipes. There are many delicious ways to eat plants, and I want to share them with you!
After making the decision to go vegan, I did a TON of research. Anybody who knows me knows that I want all of the information before I dive in. I started reading all of the vegan diet books I could get my hands on. I watched just about every vegan Youtuber out there, and I even took a community education class. But it wasn’t enough for me! I wanted more, so I decided to go back to school for food and nutrition to become a registered dietitian.
I love to incorporate all of the nutrition information that I learn in class into the recipes that I make. I try to make sure that meals have the right balance of protein, carbs, and veggies. I also teach you about the food science behind the recipe. Why do I use baking powder in cakes? How come gluten-free bread has a different texture? Why is coconut oil solid, but canola oil is liquid? I want to answer these questions for you, too!
When I’m not in the kitchen or in the library, you can find me in the lab at my day job. I’m a scientist at a biotech company and do research and development on medical devices. I live in Rochester, NY, with my two rabbits, Watson and Mousse. When I do have free time, I love to take walks outside or binge a Netflix show with my girlfriend.
